Tip: asparagus steamer for corn

I bought this asparagus steamer for $9.95 last year. It's PERFECT to steam (or boil) a couple ears of corn... and the best part is you can lift them out of the hot pot in the basket where they can cool till they're read to eat.

How do you keep the corn from turning out mushy? I put 2 ears of corn in mine (it was half-full of boiling water) and they came out mushy or soft. should I use less water? Any advice?

The corn should be completely submerged in water but let it boil for only 3 - 4 minutes. Overcooking corn could make it mushy. Also be sure to remove it from the water right away.

Be careful what corn you buy as well- sometimes now that we're late in the season, corn that's been over ripened or slightly older may have started to dry out or dehydrate, leaving them feeling mushy once boiled.

If you're just not finding ANY luck with boiling corn, rub them down with a little olive oil and salt and throw them in the broiler on some aluminum foil. Turn the corn every couple minutes and this way you'll get brown or even blackened kernals giving it that "grilled" look and flavor.
